Pumpkin Chocolate Chip Muffins

Still waiting on this baby to be ready to be born... To keep myself busy, I have been cooking, baking, and cleaning (along with walking, squatting, and going up and down stairs). My latest baking experiment was Pumpkin Chocolate Chip Muffins that I had pinned from here:



I had everything in my baking cabinet, so why not give them a go. I followed the recipe Amy from The Idea Room posted except I only added chocolate chips to half the batter - I wasn't sure I would like the combo of chocolate and pumpkin. Here are my progress pics:

Verdict: Pretty good. I was surprised I like the one with the chocolate chips. Next time I would probably just make them all chocolatey.

Things to consider: The recipe calls for a 4th cup of flour if necessary to get the right consistency. I didn't use any of that flour - and am afraid if I did use it, these things would be lead sinkers. Even with just the three cups - they were close to being a little too heavy. Also, maybe I have a small cupcake pan, but I got 23 muffins out of one batch (not 12 like the recipe said). The good news is, I froze a bunch so hopefully I will have something to eat while taking care of this baby.



I have some freezer meals stocked up and will be back to review them once we thaw them out and give them a try - again if this kid ever wants to come out! Stay tuned!
