Pumpkin Pudding

I was really excited when I came across this dish originally from How-To: Simplify because it looked so simple.

The recipe calls for just five ingredients: instant vanilla pudding, pumpkin, evaporated milk, pumpkin pie spice, and whipped cream. It takes just 5 minutes to make plus refrigeration.

The result: I found the pudding to be very bland. If I ever make it again, I think I would add more pumpkin pie spice and make home-made whipped cream to go on top instead of out of a can. I wouldn't rule it out completely but it definitely left me wanting.

Caprese Skewers

I recently hosted book club at my apartment [we read Safe Haven by Nicholas Sparks, not his best]. One of the items served were these adorable caprese skewers found originally on Terri's Table.

Terri's version looked like this:

Unfortunately, the store bought basil I used didn't look as nice. It was a bit of a challenge to wrap it all the way around the tomato and mozzarella. So I had to change the look a bit.

Overall it was a big hit! Everyone thought it was a cute/creative way to serve tomato, basil, and mozzarella. I would definitely serve this again!
