Cider Glazed Chicken with Browned Butter Pecan Rice

I pinned this recipe awhile ago, and have had some apple cider in the fridge I was ready to get rid of and left over chopped pecans from Thanksgiving - so Apple Cider Glazed Chicken fit the bill and I made it last week:


It was pretty simple. Here are the basic ingredients (plus the chicken):



While boiling the rice, I pounded the chicken and cooked it up:



And then made up the glaze:


And then browned up the butter and made the sauce for the rice:


Here is the final product:



Verdict: Delicious! The glaze on the chicken was very tasty and I loved that it was all done in one pan (aside from the rice). It was simple, but tasted like it took awhile. I am not sure if apple cider is available all year round, but if it is I would put this in my current dinner rotation.
