Funfetti Cookie Sandwiches

Last Monday, I was a little stressed out and I had no junk food in the house so I decided to make myself a treat. I gave these funfetti cookie sandwiches a whirl. This pin originally comes from Baked Perfection.


Baked Perfection

All you do is pour funfetti cake mix, 2 eggs, 1/3 cup oil, 2 tablespoons milk, and 1 teaspoon of vanilla extract in a bowl and mix.


Drop teaspoons of the dough onto your cookie sheet.



Bake at 375 for 7-9 minutes.

While those are baking, make your vanilla frosting by first beating 1 stick of butter and 1 ½ tablespoons of vanilla extract together. Add a pinch of salt then add powdered sugar one cup at a time, beating until combined. Then add you milk until you have your desired consistency.


Once the cookies are cool, frost one side and top with another cookie. Then enjoy!


The Verdict: These cookie sandwiches were very easy and quick to make. I really enjoyed them but they were super rich. The frosting in the middle tasted like pure sugar. You can definitely only eat one at a time.


Things to Note/Consider: Since these were so rich, next time I would make the cookies smaller, perhaps bite size. Also, my presentation was lacking a bit. I would probably add more frosting in the middle to make them look more like the pin. Other then that, I wouldn’t change a thing!
