Mini Pumpkin Pie Croissants

About a month ago, I posted the diet coke cake and made a challenge that we'd get 500 hits by Thanksgiving. Well I'm happy to say that with Thanksgiving still over two weeks away, we've already doubled that goal! So thank you for stopping by! We hope you've been enjoying this site as much as we have.

Now on to the pin I tried this week....

I had a bit of pumpkin left over from the pumpkin cream pie so I decided to try my hand at these mini pumpkin pie croissants that I saw on pinterest. I’ve quickly come to realize that items involving crescent rolls are not my forte. The original pin comes from pressed down, shaken together.

Original pin
Begin by cutting each crescent roll triangle in half length wise.

Make you pumpkin pie mixture – pumpkin, cream cheese, pumpkin pie spice, & sugar. Beat together. I think I made the cream cheese mistake again of not letting it sit out long enough.

Spread the mixture onto the crescent rolls and then roll up. This is where I ran into some difficulty. I don’t think I put enough pumpkin pie mixture onto the dough because it all squeezed out the side.

Once you’ve spread the mixture, roll the crescent rolls in the sugar and pumpkin pie spice mixture.

Bake at 375 for about 15 minutes.

Enjoy!

The Verdict: These weren’t my favorite. They were a bit bland. Don’t get me wrong, between my roommate and I we finished all of them but I’ve definitely tried better recipes from pinterst. If I’m going to make something with pumpkin pie, I think I’ll just stick to the mini pumpkin pie bites.

Things to Consider: Don’t be afraid of over filling the crescent rolls. I held back too much with the filling and I think that contributed to the blandness.

  1. Hi Sisters - I'm glad you tried my mini pumpkin pie croissants and I'm a little bummed they didn't turn out better. I found that by rolling the crescent rolls out, it gives a little more surface space for the filling and flakier layers. You can also adjust the filling by adding more pumpkin pie spice and/or sugar to taste. Hope you have a great Thanksgiving!!

  2. Thanks for the tips Keri! I'll have to give them another try next fall.

    Have a great holiday season!
